This recipe is just what you are looking for if you want a simple Christmas dinner entrée. Fresh thyme, rosemary, garlic, shallots, and lemon create the perfect flavor combination for to-die-for oven-baked chicken. Bonus that it will look like you spent hours in the kitchen as well because its such a pretty dish!
Ingredients:
- 1 whole chicken
- ½ T fresh thyme, chopped
- ½ T fresh rosemary, chopped
- ¼ cup olive oil
- ½ c sliced shallots
- 3 cloves sliced garlic
- 1 lemon sliced
- 1 half lemon squeezed
- ½ c chicken stock
- Sea salt and white pepper to taste
Instructions:
In a food processor blend thyme, rosemary, pepper, sea salt, and olive oil. Set aside.
Slice lemon, shallot and garlic and place on bottom of pan.
Brush top and bottom of chicken with olive oil and place breast side up in cast iron pan.
Cook in oven at 350F for 30 minutes.
Remove and add chicken stock and lemon juice.
Place back in oven cook additional 15 minutes or until internal temperature reaches 165F. (If chicken becomes too brown on top cover with foil.)
Remove and cool 15 minutes.
Carve and serve.
