This chocolate cupcake recipe has been much anticipated by all my friends because it is absolutely divine. Celia and I discovered it about a year ago when I decided to serve paleo friendly desserts at my sons’ joint birthday party. It was such a hit that I have made it probably a dozen more times in the past year for different events. I also found the most amazing frosting recipe as well that day, and if you are a die-hard chocolate fan like myself, you will be sure to get your fix with this chocolate-on-chocolate treat!
Guiltless Chocolate Cupcake Ingredients:
- 1 c coconut flour
- ¾ c raw cacao powder
- ¾ t baking soda
- ¾ t celtic sea salt
- 9 eggs
- ¾ c coconut oil, melted
- 1 c + 2 T pure maple syrup or raw honey
- ¾ c water
- 1 T vanilla extract
Step 1: Preheat oven to 350F and fill cupcake tins with paper liners.
Step 2: Combine coconut flour, cacao powder, baking soda, sea salt in a bowl and set aside.
Step 3: Whisk eggs in a medium bowl and add coconut oil, maple syrup, water, and vanilla to the eggs. Mix.
Step 4: Add dry ingredients to wet ingredients, and mix on low for 1 or 2 minutes with a hand mixer.
Step 5: Pour/Spoon batter evenly into cupcake tins.
Step 6: Bake for 18- 20 minutes or until a toothpick inserted in the center of a cupcake comes out clean.
Step 7: Let pans cool slightly, then remove cupcakes and cool on a wire rack.
Step 8: Make the Best Chocolate Frosting.
Ingredients:
- ½ c pasture butter
- 1 c of unsweetened cocoa powder
- ¼ c of arrowroot flour
- ¾ c of pure maple syrup
Whip the butter on high speed until fluffy. Sift together the cocoa powder and arrowroot flour and add to the fluffy butter. Continue to whip while intermittently adding the syrup. Adjust the syrup level to taste.
Step 9: Spoon icing into a ziploc bag.
Step 10: Cut a small whole in the corner of the bag.
Step 11: Squirt frosting out of the bag and swirl around the top of the cupcakes.
Step 12: If desired, top with allergen friendly mini chocolate chips.
Step 13: Serve and enjoy!
These cupcakes are simple, quick, and delicious. Make them for your next holiday party, and I assure you no one will guess that they are paleo!! Hope you enjoy. =)
