So 0ne of the recipes Celia included in our meal plan coming up in a few weeks calls for orange marmalade… (spoiler alert: it also calls for beef ribs, chipotle, and cooking all day long in the crockpot… o.m.g. DELISH!) Surprisingly we were actually able to find a Dr. Brown approved bottled orange marmalade, but we thought it might be nice to have a fresh homemade version as well. Seriously, this stuff is so good! I can’t wait to have it atop some paleo toast or biscuits! Check it out!
Ingredients
- 2 lg oranges
- 1 lg lemon
- 3 T raw honey
- 1 cup dry pitted dates
- ⅛ t baking soda
- 1 T pasture butter
Step 1: Peel 1 orange and lemon rind.
Step 2: Slice in half and into thin stripes, and place in hot pot with 1 T melted butter. Stir frequently and cook for about 3-5 minutes over medium heat — it should become very fragrant.
Step 3: Add diced meat of both oranges and lemon and baking soda, and allow to simmer for 5-7 minutes. Stir frequently to make sure it doesn’t burn.
Step 4: In a food processor, blend pitted dates and ½ cup hot water. You may need to add a little extra water. You want it to have the consistency of syrup.
Step 5: Pour date mixture into pot and mix well.
Step 6: Add 3 T of honey, stir, and allow to cook another 5 minutes on medium heat, stirring frequently.
Step 7: Pour while hot into mason jar.
Step 8: Allow to cool to room temp before placing in the fridge.
