A delicious dish with classic ingredients that will make your family happy and full while still being healthy.
Ingredients
- 1 Tablespoon lemon juice
- ½ teaspoon oregano
- ½ teaspoon pepper
- ¼ teaspoon sea salt
- 1¼ pounds unpeeled sweet potatoes, cut into ¾" chunks
- 1 pound plum tomatoes, cut into ½" chunks
- 4 boneless, skinless chicken breast halves
- 2 ounces Dr. Brown approved cheese
Instructions
- Preheat the oven to 400°F. Spray 9”X13” baking dish with nonstick cooking spray. In a small bowl, mix lemon juice, oregano, pepper, salt and 2 Tablespoons water. Arrange sweet potatoes and tomatoes in baking dish. Drizzle evenly with half lemon juice mixture.
- Place chicken on top of vegetables and drizzle with remaining lemon juice mixture. Cover with foil and bake 45 minutes, occasionally spooning pan juices over chicken and vegetables.
- Uncover and bake 15 to 20 minutes, or until chicken is cooked thoroughly and vegetables are tender.
- Crumble goat cheese evenly over top of chicken and vegetables and bake 3-4 minutes longer, or until cheese is melted.
