Ingredients
Chicken
- 4 boneless skinless chicken breast
- ½ c balsamic vinegar
- ½ c extra virgin olive oil
- ¼ cup pure maple syrup
- 1 T fresh ground black peppercorns
- 1 t sea salt
Glaze:
- 8 oz Wellshire Farm turkey bacon
- ½ c pure maple syrup
- 5 dashes of Tabasco or Red Devil Hot Sauce
- 3 T Worcestershire
Instructions
- Place bacon strips on baking sheet and cook at 425 for 20 minutes until crisp. Let cool.
- Preheat oven to 350F.
- In a gallon ziplock bag, place chicken.
- Cover with balsamic vinegar, maple syrup, olive oil, salt and pepper.
- Allow to marinate for at least 30 minutes.
- Crumble bacon and set aside.
- After chicken has set in mixture, remove and place in a baking dish. (I take a marinade injector and use the mixture in the bag to inject the chicken, or you can just spoon a little of the marinade atop each breast. Discard remaining marinade.)
- Place in oven and cook for 25-30 minutes.
Glaze:
- In a medium sauce pan pour in maple syrup, hot sauce and Worcestershire.
- Heat on medium heat and allow to bubble for 1-2 minutes. Remove from heat and add chopped bacon.
- Once chicken Is cooked, drizzle glaze over chicken and serve.
