Butternut squash mash is a delicious and nutritious substitute when you are wanting to avoid all the empty calories of starchy mashed white potatoes.
Ingredients
- 1 butternut squash
- 4 T pasture butter
- 1 t cinnamon
- 1 t nutmeg
Instructions
- Preheat oven to 400F.
- Cut squash in half lengthwise and bake face down on cookie sheet for 40 minutes.
- Scoop out seeds and discard.
- Scoop out flesh into a bowl and combine with butter and spices.
- Using a hand mixer, whip the squash until smooth.
- Return to a baking dish and bake at 350F for 20 more minutes.
