This Caprese Fish recipe turns ordinary white fish into a delicious dish that bursts with flavor!
Ingredients
- 4 (6oz) halibut or cod
- ½ cup Basil pesto
- 2 cups cherry tomatoes
- Sea salt and pepper to taste
- 8 skewers (optional)
Instructions
- Cut fish into 1 inch cubes.
- On soaked skewers place a piece of fish and tomato and repeat process.
- Sprinkle with salt and pepper and coat well with basil.
- Place on preheated grill and cook 3-4 minutes on each side.
- Turn as you go.
- Or if not using skewers, place fish cubes in baking dish with tomato and coat with basil pesto, and place in oven on 400F for 10-12 minutes.
