Cauliflower "Potato" Salad

This cauliflower salad recipe is a great substitute when you are wanting the texture and flavor of traditional potato salad without all the empty starchy carbs!
Ingredients
- Large head of califlower
- 6 hard-boiled eggs, chopped
- 3 stalks of celery, chopped
- 1 small red onion, chopped
- 2 green onions, chopped
- ½ pkg turkey or beef bacon--cooked and crumbled
- 1 cup mayonnaise
- 1 T mustard
- ½ t stone ground mustard
- salt & pepper to taste
Instructions
- Steam the cauliflower until tender.
- Add steamed cauliflower to large mixing bowl.
- Fold in chopped hard boiled eggs, celery, onion, green onion, crumbled bacon, mayo and mustard. Mix ingredients well but don't over do it , or you will have cauliflower mash.
- Place in fridge for at least a few hours. You can make this ahead of time and leave your self more time on bbq day.
- Serve chilled and enjoy.
