Sweet Italian Turkey Sausage Soup

Need an italian sausage recipe that is easy to make and won't take long to get to the table? Look no further.
Ingredients
- 1¼ lbs sweet turkey Italian sausage, casing removed
- 1 small onion, diced small
- ½ red bell pepper, diced
- ½ green bell pepper, diced
- 4 garlic cloves
- 2 t dried oregano
- 2 t dried basil
- ¼ t cayenne pepper
- 1 t salt
- 1 t black pepper
- 2 T tomato paste
- 1 jar (18 oz) diced tomato
- 1 jar (18 oz) crushed tomato
- 6 c low sodium beef broth
- 3 c chopped kale (1x1 inch pieces)
- 2 T butter
- 1 t garlic salt
- ¼ c fine grated Romano
Instructions
- In a large sauce pot, add italian sausage and sauté until no longer pink. Add onions, peppers and garlic. Cook until softened. Drain off any fat, if needed.
- Add seasonings, crushed tomato , diced tomatoes with juice, broth and kale.
- Bring to a boil, then reduce to a simmer. Let simmer for 15 - 20 minutes to meld flavors.
- Serve and top with a sprinkle of Romano cheese
