Pomegranate Broccoli Salad

This broccoli salad combines broccoli with delicious toppings such as pomegranate seeds, blueberries, and slivered almonds to create a crunchy, tasty, and healthy side dish!
Ingredients
- 4 cups broccoli florets
- ¼ c pomegranate seeds
- ¼ c fresh blueberries
- ¼ c dried cranberries
- ¼ c slivered almonds
- 1 T poppy seeds
- ½ red onion, thin sliced
- ¾ c paleo mayonnaise (we like the Tessemae's brand)
- 1 t sea salt
- ½ lemon, squeezed
Instructions
- Toss all ingredients into a bowl and mix to combine well.
This is a 5-star salad. My phone would not register the 5th star for some reason.
This broccoli salad is an incredible blend of fruits and vegetables. It is tasty and a different type of broccoli salad. I plan on making this salad for my family! Thank you!

I love this lighter version of a broccoli salad. The extra fruit adds texture and sweetness so you don’t miss the bacon or sugar traditionally used in broccoli salad. I also really liked that the mayo is mixed with lemon juice instead of vinegar which helps thin it out and add one more layer of flavor.
