Roasted Tomato, Onion, and Basil Soup

What could be better than a cup of hot soup made from delicious roasted veggies like tomato, onion, and garlic?!
Ingredients
- 8 tomatoes of choice
- 1 c cherry tomatoes
- 1 large sweet yellow onion, quartered
- 2 T olive oil
- 1 handful of fresh sliced basil
- 5 cloves of garlic
- sea salt and pepper to taste
Instructions
- Pre-heat oven to 400F.
- Wash tomatoes, slice in half, and add to baking pan.
- Quarter onion and add to baking dish as well as garlic cloves.
- Top with olive oil and stir to coat all pieces well.
- Cook for 30 minutes.
- Remove from oven and place in food processor or blender.
- Add salt and pepper and basil and blend until desired texture reached.
- Serve hot.
