Vegetable Medley

This classic vegetable medley of squash, zucchini, pepper, onion, and mushrooms is a versatile side that is sure to bring flavor to any meal!
Ingredients
- 2-3 zucchini
- 2-3 yellow squash
- 1 red pepper
- 1 red onion
- 1 package whole mushrooms
- 1 garlic clove, minced
- 1-2 tablespoons balsamic vinegar
- 1 tablespoon olive oil
- 1 tablespoon rosemary leaves
- 1 teaspoon sea salt
Instructions
- Preheat oven to 450°F
- Cut zucchini and squash lengthwise into fourths and then slice into bite size pieces
- Cut pepper into 1 inch pieces
- Cut onion into wedges
- Mix all of cut vegetables and garlic in a large bowl
- Add olive oil and balsamic vinegar and toss until vegetables are covered
- Add rosemary leaves and salt and toss again
- Roast vegetables for about 30 minutes or until outside edges are brown and inside is tender
